Production of Lactic Acid from Immobilized Cells of Streptococcus thermophilus and Lactobacillus balgaricus Using Skim Milk Medium

Abstract

|
The medium system for immobilization of acid bacteria cells using produced by skim milk was investigated. Living cells of S. thermophilus and L. bulgaricus were immobilized in sodium alginate. The production amount of lactic acid from immobilized S. thermophilus was similar to that of immobilized cells produced by M17 medium. The a mount of lactic acid produced in agitated culture (100 rpm) by immobilized S. thermophilus was higher than that of static culture. In amixed culture of immobilized S. thermophilus and immobilized L. bulgaricus at a ratio of 1 : 1 (wt/wt), the production amount of lactic acid after five sequential batch fermentations was better than that of the first batch fermentation. Skim milk starter was found to be equal to commercial M17 medium for culturing lactic acid bacteria.
